Ingredients
For dressing
- 1 cup low fat plain Greek yogurt
- 1/4 cup honey
- 1/4 cup lime juice
- 1/4 cup fresh mint
- pinch salt
For the combined salad
- 2 cup COOKED quinoa, cooled
- 4 cups shelled edamame, cooked and cooled
- 6 cup berries, (any combination, slice strawberries)
- 1 mango, diced
- 1 cup unsweetened coconut flakes
Instructions
- In a large mixing bowl, add yogurt, honey, lime juice, mint, and salt to make dressing. Whisk.
- Add all remaining ingredients to bowl and stir to combine.
- Portion and enjoy.
